Soulfood,
a somewhat trained term, since cooking fashion has discovered it – suddenly
every recipe should touch the soul. In the southern states of America it was
known long before, how food tastes, that got soul. The descendants of the
slaves had learned to prepare a sunday meal with the available means. Their
food became even bolder and more interesting with the influences of the African
and Creole cuisine. Today juicy spare ribs, spicy jerk rub and all the other
delicacies are at home in the American cuisine, from where they are just
conquering the world. And more than a few great cooks celebrate these solid and
spicy dishes as something, that will not make you slim but satisfied
The
Soulfood-book and the accompanying CD establish the missing link between music
and dinner, and illustrate an attitude full of pride and vitality in the face
of poverty and suppression.
The
author, DJ and cook Sven „Katmando“ Christ is collecting soulfood -recipes, -stories
and -music since 15 years. He also looked for alternative ingredients and ways
of preparation, to make soulfood accessible to a wider public. On his travels
in the USA and the Caribbean he interviewed the mothers, aunts and grandmothers
of his friends to get hold of family recipes and secret ingredients. Jamaican
families, Soul singers and HipHop stars have been entertained by him, and often
a special dish has lead to a futher story. There is something special in
soulfood, that manages to take a shortcut into heart and hips.
